Olive oil is produced by grinding olives and extracting the oil by mechanical or chemical means.
Types of olives - Green Olives, Black Olives, Green Table Olives, Black Table Olives. Green olives produce bitter oil, and overripe olives produce rancid oil. So for good extra virgin olive oil, care is taken to make sure the olives are perfectly ripened. Over the years, the method of olive oil extraction has also evolved.
TRADITIONAL METHOD
OLIVE PRESS
People first started using olive presses thousands of years ago. This basic method is still widely used today, and is still a valid way of producing high quality olives oil if adequate precautions are taken.
STEP 1
First the olives are ground into an olive paste using large millistones. The olives paste generally stays under the stones for 30 to 40 minutes. This has three objectives:
1- to guarantee that the olives are well ground
2- to allow enough time for the olive drops to join, to form the largest droplets of oil
3- to allow the fruit enzymes to produce some of the oil aromas and taste
STEP 2
After grinding, the olive is spread on fibre disks, which are stacked on top of each other to form a column, then placed into the olive press. Pressures is then applied onto the column, to separated the vegetal liquid(containing the oil) from the paste. To facilitate separation of the liquid phases, water is run down the slides of the disks to increase the speed of percolation.
STEP 3
The liquids are then separated either by a standard process of decantation or by means of a faster vertical centrifuge.
The traditional method is a valid form of producing high quality olive oil, despite its disadvantages.Olive oil is enjoyed as a condiment, served as an appetizer.
